Introduction

I love the combination of the tender zucchini...the crunchy panko...the salty feta...Delish! I love the combination of the tender zucchini...the crunchy panko...the salty feta...Delish!
Number of Servings: 2

Ingredients



    * Zucchini, 2 cup, sliced (remove)
    * Onions, raw, 1 medium (2-1/2" dia) (remove)
    * *Bread Crumbs PANKO Kikkoman 1/2 cup=1serving, 1 serving (remove)
    * *Athenos Reduced Fat Feta Cheese, 2 oz (remove)
    * *Canola Oil, 1 tbsp (remove)
    * Olive Oil, 1 1tsp (remove)

Directions

*Preheat oven to 400
*Slice Onions and zucchini in quarter inch slices
*Heat canola oil in ovenproof skillet - cook zucchini and onions until starting to get soft.
*Spread veggies in even layer on bottom of pan
*Sprinkle with cheese
*Mix breadcrumbs with olive oil and sprinkle over the top.
*Bake for 20 minutes or until crumbs are golden brown.

Makes 2 very generous servings
