Introduction

These are a family favorite....you bake a box of cake mix in a cookie sheet, frost half, and put the other half on top, and cut it into squares to make little sandwich cakes. Ingredients

    1 Box Cake Mix - I've used reduced sugar Pillsbury here
    2 eggs, box calls for 3, but I cut it down to 2
    50 mL of oil, I used olive, box calls for 1/3C, but I'm trying to cut some fat and calories!

    Frosting: This will make more than you need but I don't know how to cut it down any more! You should have about a cup left over - a half pound maybe?
    1 pound powdered sugar
    3.5 oz shortening
    1/4 tbs vanilla
    1/3 cup skim milk - may need more if mix seems too thick to spread

Directions

Mix cake batter using the altered ingredients list I have. Line a cookie sheet with wax paper and pour cake mix in. Bake @ 350 for 20 minutes. Remove and cool completely. If it is even a little warm, it will melt the icing. Mix frosting ingredients with a beater. Cut the cooled cake in half, frost one half and top with the other. Cut into 24 squares.
