Chicken Spinach Lasagna

Introduction

Number of Servings: 8

Ingredients

    1pkg whole wheat lasagna noodles (6 strips/5oz)
    1lb chicken breast
    10 ounces spinach (thawed & drained)
    1 medium onion (diced)
    2.25 cup nonfat milk
    1tsp ground nutmeg
    1/2 cup chicken buillon
    3/4 cup cornstarch
    1tsp onion powder (or 2 tsp dried onion flakes)
    1tsp basil
    1tsp thyme
    1/2 tsp black pepper

    for cheese mixture:
    2 cups ricotta
    2 cups mozzarella
    grated parmesan (sparingly on top)

Directions

makes 8 3"x4" slices

You will need 1 9"x13" dish to bake in.
2 bowls for mixing, 1 large, 1 small.
1 large pot to cook lasagna noodles (follow instructions on package).

instead of cream of chicken soup, you can make your own lower cal variation:
3/4 cup cornstarch
1/4 cup low-sodium instant chicken bouillon granules
2 tablespoons dried onion flakes or 1 teaspoon onion powder
1 teaspoon dried basil
1 teaspoon dried thyme
1/2 teaspoon pepper

mix ingredients together in large bowl w/ 1 1/2 cup milk.

boil or bake chicken. when cooked, shred finely, and add to large bowl with thawed & drained spinach, finely chopped onion, and nutmeg.

in the small bowl, you will mix ricotta and mozzarella together (saving about 1/4 cup mozzarella for the top of the lasagna)

layer the bottom of your baking dish with noodles, followed by chicken/spinach mixture, then a thin layer of the cheese mixture.

repeat for second layer.

when finished, top off with the remaining mozzarella cheese & sprinkle some grated parmesan (if desired).

cover with foil, and bake at 375 for 45 min.
uncover, and bake for an additional 15-20min (or until top begins to lightly brown).
