Ingredients
-
Bush's Navy Beans, 1 can
Onions, raw, 0.5 cup, chopped
Turtle Mountain So Delicious Vanilla Coconut Milk, 0.75 cup
Garlic, 2 tsp
Coconut Oil, 0.75 tbsp
Water, 3 cups
Wheat flour, white, bread, enriched, 1 tsp
**Spices to taste**
Cumin
Paprika
Parsley
Oregano
White Pepper
Directions
Chop about half a cup of onion and saute in 3/4 tablespoon of oil until translucent.
In large skillet, pan, or pot bring 3/4 cup coconut, soy, or rice milk just to a boil. Add 1 tsp flour for thickness. Add 1 can white beans. (I used navy beans.) Add garlic, onions, and spices to taste. Add 2 cups water.
Reduce heat and simmer about 20-30 minutes stirring frequently. You may need to add more water during cooking.
The final consistency should be between a soup and a dip, something like runny hummus.
I served this over rice.
Makes 2 servings of about 1 cup each.
