Blueberry Power Muffins

Introduction

This is adapted from a recipe I got from a calendar! This is adapted from a recipe I got from a calendar!
Number of Servings: 12

Ingredients

    3/4 cup all purpose flour
    1/2 cup whole wheat flour
    1/2 cup large flake oats
    1/2 cup sugar
    1 1/2 tsp baking powder
    1/2 tsp baking soda
    1 cup fat-free vanilla yogurt
    1/4 cup 1 % milk
    1 egg
    1 T canola oil
    1 tsp vanilla
    1 cup blueberries, fresh or frozen
    1/4 cup sliced almonds

Directions

Makes 12 muffins

In bowl, whisk together flours, oats, sugar, baking powder and baking soda. In another bowl, whisk together yogurt, milk, egg, oil and vanilla. Pour over dry ingredients and stir just till moistened. Fold in blueberries. Pour batter equally into a 12 cup paper-lined muffin tin.
Sprinkle each muffin with sliced almonds.
Bake at 400F oven for 20 minutes or until muffin springs back when lightly touched. Serve warm or at room temperature.
