2 cups fresh sweet corn
3/4 cup low fat cream cheese
2 TBSP red onions chopped
1 jalapeno pepper seeded and finely chopped
Cut corn off of cob to yield 2 cups.
Chop peppers and onions finely.
Mix all ingredients together and bake 30 minutes.
Makes 4 servings
