Broccoli Frittata

Ingredients

    4 large eggs
    1 c. egg substitute
    1/2 to 1 c. chopped onion
    1 c. chopped broccoli
    1/2 c. low-fat cheddar cheese

Directions

Spray a non-stick pan with olive oil. Cook onion and broccoli, covered on medium heat, until onion is translucent. Add 1 t. water if it looks like it wil burn. In a bowl, whisk eggs and egg substitute. Pour into pan and turn heat down to low. Cook, gently scraping cooked egg from the bottom with a rubber scraper. When mixture is almost cooked, take pan from heat and sprinkle on cheese. Put pan under the broiler until cheese is melted.
