Introduction

An awesome "spice" cupcake with a secret healthy ingredient - pumpkin! An awesome "spice" cupcake with a secret healthy ingredient - pumpkin!
Number of Servings: 36

Ingredients

    4 cups white flour
    1 cup white sugar
    1/2 cup brown sugar
    3 tsp baking powder
    2 tsp baking soda
    1 tsp salt
    6 Tbsp All Whites Egg Whites
    1 cup unsweetened applesauce
    1 cup plain, 1% milk
    2 tsp vanilla extract
    1 Tbsp Pampered Chef Cinnamon Plus Spice Blend (I had to code it as cinnamon)
    15 oz Libby's Pure Pumpkin

Directions

Mix pumpkin, applesauce, yogurt, vanilla and egg whites until smooth.

Stir in Cinnamon Plus spice, then stir in sugars - blend until smooth.

Add dry ingredients; mix well.

Pour into 36 greased muffin cups (I use silicon cups; using regular a muffin pan will yield fewer muffins) and back at 350 degrees for 20 minutes.
