3.5 cups pearl barley, cooked (yield of 1 cup dry)
1/4 cup cider vinegar
1 Tbsp olive oil
1/2 tsp salt
1 Tbsp fresh basil, chopped
1/2 cup thinly sliced onion
1 cup grated carrot (about 1 large)
3/4 cup fresh sweet corn (I just shave it raw off the cob, but you can also use frozen or canned.)
3/4 cup canned, chopped pineapple, drained. (Fresh would also be great.)
1 cup chopped tomatoes
1 cup halved, sliced cucumbers
1/4 cup chopped walnuts
Mix in cider vinegar, olive oil, salt, basil, and onions. Stir well. (If the barley is somewhat warm, these will absorb some of the heat, and the heat will let flavors mix more quickly.)
Add in carrots, corn, pineapple,tomatoes, cucumber and walnuts. Mix well.
Chill for at least a half hour, then enjoy!
Makes 8 1-cup servings.
