1 Large or 2 Med. Potatoes per person (I used 8 large)
4 large eggs
.5 cup mayo
.75 cup plain greek yogurt
1 Tbsp mustard
Med. onion diced
2 cloves garlic minced
2 whole dill pickles or 4 spears diced
Zest and juice of 1 lemon
Dash hot sauce (more or less to your taste)
Salt and pepper
While potatoes are boiling combine the next 8 ingredients
Salt and pepper to taste.
Drain potatoes and eggs (peel and dice)
Add warm potatoes and diced eggs to bowl and toss to coat. Roughly smash as you toss so you have a slightly chunky slightly smashed salad. Serve right away warm or cool in fridge for later.
