Homemade Cinnamony-Chocolate Breakfast Bar

Introduction

A quick and easy recipe for a protein and fiber-rich breakfast bar for those mornings when you just don't have time to do anything but grab and go. You can add nuts, dried fruit, honey, etc. to taste as you prefer. Ingredients

    3 cups old-fashioned oatmeal
    4 tsp ground cinnamon
    3 large eggs
    3 cups chocolate soy milk
    1 cup water
    5 tbsp almond butter

Directions

Preheat oven to 375 degrees Fahrenheit.

Mix oatmeal and cinnamon in a large bowl. Beat eggs, soy milk, water, and almond butter together in a medium bowl. Add liquid mixture to dry mixture, stirring in almond butter completely.

Grease a 9x13" pan and pour in mixture, spreading out oats evenly. Bake for 30 minutes, or until top begins to dry. Let cool. Makes 9-12 servings, depending on the size of bars you cut from it.
