Zone Diet Cheesy Potato Soup

    1 leek
    1c chopped onion
    2 tsp minced garlic
    4c chopped potato
    4c Pacific low sodium chicken broth
    2c water
    1c unsweetened soy milk
    4 pieces Oscar Meyer center cut bacon
    1 tsp dried parsley
    1 tsp cayenne (more or less to taste)
    salt & pepper to taste

    (I use Whole Foods 365 unsweetened soy milk-- it has better nutrition than the other brands they carry, in my opinion.)

    Make sure to serve with:
    1/4c lowfat cottage cheese
    2 Tbsp + 2 tsp shredded cheddar cheese

    (I also use Organic Valley lowfat cottage cheese from Whole Foods.)

    Macronutrient breakdown:
    40.6% carbs, 28.7% protein, 30.7% fat


In the bottom of a large pot, sautee leek, onion, and garlic in an inch or so of chicken broth over medium heat for about 5 minutes. Add the rest of the stock, potatoes, water, and spices. Bring very briefly to a boil, then reduce heat to low and simmer partially covered for 30 minutes or until potatoes are soft. (Be careful not to boil over.) Meanwhile, cook or microwave the bacon and separate each piece into thirds (each serving will receive 2/3 a strip). Cool the softened potato mixture down just enough to blend, in batches if necessary. Transfer blended mixture back to the pot and stir in the soy milk until completely mixed.

When ready to serve, mix cheese into each hot portion, stirring until mixed well, then garnish with crumbled bacon.
