Kelly's Chicken & Cheese Macaroni Casserole

Ingredients

    16oz chicken breast no skin
    1 Tbs minced garlic
    1 Tbs italian seasoning herbs
    1 Tbs minced onion
    14 large olives sliced or diced
    1/4 bell pepper
    16 oz rotini whole wheat (this is what I had on hand)
    2 Tbs butter
    1 Tbs corn starch
    1/2 C non-fat milk
    2 Tbs parmesan shredded or grated
    1 C part skim mozzarella shredded
    14.5oz can of del monte petite cut diced tomatoes no salt

Directions

Measure out pasta before cooking and then cook. Cut up chicken into small pieces. Spray pan with olive oil and cook garlic, italian seasoning, and minced onion. Then add chicken and saute until brown. In a small pan add milk, butter, parmesan cheese and cornstarch just until bubbly. Open can of tomatoes and drain as best as possible then add to sauce and mix well. Let set with heat off. In the pan with the chicken add bell pepper and olives and saute a little further to soften peppers.
Pour milk/tomato sauce in with chicken mix together and set aside.
Spray a 9x13 casserole dish and pour cooked pasta into dish. Then pour chicken sauce mixture on top and mix evenly and finish by topping mozzarella on top evenly.
Cover and cook at 350 for 20-30 minutes removing the cover for the last 5 minutes to brown cheese.
