Introduction

Tonight I'm stuffing the end of a huge zuchinni that was hiding in my garden. It was the size of a club! I'm staying away from egg and bread crumbs, so it will be saucier than usual, but the mozzerella cheese should hold it together a bit. Number of Servings: 4

Ingredients

    1 Tbs olive oil
    1/2 large onion
    2 cloves garlic
    2 Benetino's bistro Snesations Smoked Mozzarella with Artichoke and Garlic chicken Sausage links
    2 small portabello mushrooms, stems and underside removed
    1 small red pepper
    8 cherry tomatoes
    1/2 C mozzarella cheese
    salt and pepper to taste
    2-3 large green zuchinni

Directions

Set aside zuchinni. Chop all other veggies and saute in olive oil. Mix in cheese, reserving a little to add to the top toward the end of cooking. Bake at 350 for 40 minutes or until zuchinni is cooked through.

Note: I used a giant zuchinni from our garden and stuffed the end of it after removing the seeds from the center. I chopped a bit of zuchinni and added it to the stuffing as well.
