Blueberry Scones

Introduction

Traditional Buttermilk Scone recipe, lightened up with use of smartbalance butter blend instead of real butter. Can leave out the blueberries and substitute any other fruit, raisins, etc.

Number of Servings: 12

Ingredients

    400g (3 1/3 cups) plain flour
    100g (1/2 cup +) super-fine sugar
    1/2 tsp baking powder
    1/2 tsp baking soda
    3/4 tsp salt
    3/4 c soft butter
    1 cup buttermilk

Directions

Preheat oven to 425 degrees F

Sift dry ingredients in a bowl. Add room temperature butter and cut into the dry ingredients with a fork until the mixture resembles dry breadcrumbs. Add buttermilk and mix. The dough will be a bit moist. Roll half the dough into a ball and flatten on floured surface. Cut into six pieces with a scone cutter or simply cut into wedges. Repeat with the remaining dough.

Place on ungreased baking sheet and bake for 12 minutes.

You can brush buttermilk on top and sprinkle with sugar before baking if desired.

Makes 12 servings.
