Ingredients

    Olive Oil Cooking Spray
    6 egg yolks
    1/2 tsp onion powder
    1/4 tsp salt
    1/8 tsp pepper
    6 egg whites
    1 (14.5 oz) can stewed tomatoes
    1/8 tsp pepper

Directions

Spray 8x8x2 inch baking dish with nonstick cooking spray; set aside. For omelet beat egg yolks, onion powder, salt and 1/8 tsp. pepper about 4 minutes or until thick and lemon colored. Spread mixture evenly into prepared dish. Bake at 350 degrees for 22 to 25 minutes or until knife inserted comes out clean.

Meanwhile for sauce, combine undrained tomatoes, and pepper. Bring to a boil. Reduce heat. Simmer, uncovered, for 10 to 12 minutes more or to desired consistency.

To serve, cut omelet into quarters. Top with sauce.
