Introduction

An tasty Indian-style way of cooking rack of lamb. An tasty Indian-style way of cooking rack of lamb.
Number of Servings: 3

Ingredients

    400g (about 3/4 lb) lean rack of lamb (6 - 8 cutlets)
    1 small onion, chopped
    3 cloves garlic, minced
    1 tbspn indian curry powder
    1 tspn dried chilli flakes
    2 tspn ground tumeric
    2 tspn garam masala
    125 g (1/2 cup) non-fat yoghurt
    1/4 cup lemon juice

Directions

1. Mince onion, garlic and spices in a blender
2. Add yoghurt and lemon juice
3. Spoon mixture over rack of lamb and marinade overnight.
4. Roast lamb in moderate to high oven for approximately 30 mins, until lamb is cooked outside but pale pink in centre
Serve with vegetables.
Makes 3 serves of 2 - 3 ribs
