IntroductionDon't let the sauerkraut scare you off. By rinsing it, you get rid of a lot of the sodium (my guess is the nutritional info shows too much) and all the apples mitigate the sour taste of sauerkraut. Don't let the sauerkraut scare you off. 2 lbs sauerkraut
7 tart apples, peeled and sliced
2 T whole wheat flour
1/2 tsp cinnamon
dash of cloves and nutmeg
2 T honey
olive oil spray
1 cup chopped onions
1/2 tsp dry mustard
1/2 lb Cabot 50% lower fat sharp cheddar cheese, grated
1/2 cup Panko breadcrumbs
1/2 cup finely chopped walnuts or almonds
1 5 oz can tuna in water, well drained and flaked
Place the sauerkraut in a colander and rinse well under cold tap water. Squeeze it dry and set aside.
Toss together the apples, flour and spices. Drizzle in the honey and mix.
Saute the onions using the olive oil spray until clear and soft (5-8 minutes). Add the dry mustard and sauerkraut and cook another few minutes over medium heat. Remove from heat.
Take half the grated cheese and combine it with the breadcrumbs and chopped nuts.
Grease a 9x13 pan and make the following layers:
half the apple mixture
half the onion-sauerkraut mixture
plain, grated cheese
remaining onion-sauerkraut mix
Cover and bake 20 minutes at 375 deg F. Uncover and bake 20 minutes more.
