Introduction

Eggs with a kick to get you going! I added a southern Mississippi to this traditional recipe--Rotel tomatoes! Eggs with a kick to get you going! I added a southern Mississippi to this traditional recipe--Rotel tomatoes!

Ingredients

    1/4 green bell pepper, chopped
    1/2 medium vidalia onion, chopped
    1 can Rotel tomatoes, drained
    1/4 can of black beans, drained
    2 cups of liquid egg substitute
    3 whole wheat pitas
    fat free sour cream

Directions

Saute onion and pepper until tender in non-stick pan. Add tomatoes and beans and cook until caramelized. Add egg substitute and scramble. When cooked through, stuff pita and dollop with fat free sour cream.
