Ingredients

    1 C Extra Light Baking Mix
    1 c water
    1 egg beaten
    1 T honey

Directions

10 PANCAKES - SERVES 2 (5 3-in pancakes each)

Stir gently until moistened. Drop by cupfuls onto hot PAM sprayed griddle.
Cook until bottom is lightly browned.
Flip and cook until 'done'.

Great with warmed, thickened fruit toppings or 'fried apples'

SINGLE SERVING FRIED APPLES
1 T butter or trans free margarine
1 apple, sliced to " thickness
1 T maple syrup

Add all ingredients to a hot iron skillet. Saute until apples are done - spoon over pancakes!
