Basic Potato Soup



Introduction

Ingredients

    2 TBS vegetable oil (such as canola)
    1 large onion, diced
    5 cups chopped potatoes (about 6 medium)
    4 cups water
    2 TBS butter
    1 cup nonfat evaporated milk
    1 TBS salt
    1 tsp black peppet

Directions

Sautee onions in oil until translucent and tender.
Add 4 cups water.
Add five cups potatoes and simmer until potatoes are quite soft and liquid is thick.
Add salt and pepper and simmmer 2 more minutes.
Add butter and milk and simmer 2 more minutes.
Serve with buttermilk, cheddar or colby, green onions, or all alone!
Makes (8) 1-cup servings.
