Introduction

This is a modification from a Rachel Ray recipe. I reduced the amount of fat and increased the number of portions. This about 1/2 the original recipe and still makes 10 good-sized portions. Ingredients

    3 Tbsp olive oil
    3 cloves garlic
    1/2 tsp cayenne pepper, or to taste
    1 Tbsp oregano, dried
    1 Tbsp parsley, dried
    4 oz white wine
    1 1/2 Tbsp Brummel and Brown spread
    2 C chicken broth, fat free/reduced sodium
    1 C water
    12 oz pkg whole grain linguini
    14 oz pkg raw shrimp, peeled and deveined
    1/4 C lemon juice
    10 leaves basil, torn
    salt to taste
    ground black pepper, to taste

Directions

In a large skillet, heat the olive oil over medium heat. Add garlic to the pan. Sautee briefly.

Add herbs and wine and reduce for 1 minute. Add Brummel and Brown spread to the sauce. Add broth and water to the pan; bring to a boil. Stir in pasta. Simmer uncovered for 3 minutes. Add shrimp and continue to cook until pasta is al dente, and shrimp are firm. Add remaining ingredients.

Serve directly from pan with hot, crusty bread (not included in calorie count).
