    2 boneless chicken breasts, 4 carrots, peeled and sliced, 4 stalks of celery, sliced, 1 medium onion chopped, 2 tsp garlic, 1 cup 2% cheddar cheese, 1 cup 2% milk, 1 cup brown rice

Directions

Cooke 2 boneless chicken breasts until falling apart, save broth, saute 4 carrots, peeled and sliced, 4 stalks of celery, sliced, 1 medium onion chopped, 2 tsp garlic, in 2 tsp lowfat margarine, add 1 cup 2% cheddar cheese, 1 cup 2% milk, 1 cup brown rice. Simmer 20 minutes.
