Introduction

Took my mother-in-laws zuchinii bread recipe and adapted it for healthy low fat low sodium muffins. Took my mother-in-laws zuchinii bread recipe and adapted it for healthy low fat low sodium muffins.
Number of Servings: 24

Ingredients

    Vanilla extract, imitation, 2 tsp
    Zucchini, 2 cup, shredded or diced
    *Dole - Crushed Pineapple in 100% Pineapple Juice, 8 oz can drained
    Baking Soda, 2 tsp
    Cinnamon, ground, 1 1/2 tsp
    Nutmeg, ground, 3/4 tsp
    Baking Powder, 1/4 tsp
    egg white, fresh, 6 large
    Applesauce, unsweetened, 1 cup
    *Dixie Crystals Light Brown Sugar, 1 cup
    Flour, white, 1.5 cup
    *Whole Wheat Flour, 1.5 cup

Directions

makes 24 muffins using an ice cream scoop to keep it uniform

mix egg whites, applesauce, brown sugar and vanilla beat until well mixed. mix dry ingredients together in a seperate bowl and set aside. add dry ingredients to white slowly and mix well. add pineapple and zuchinii.

can also make two 9x5 loaves and bake for 1 hour.
