Strawberry Mochi

Introduction

Japanese Rice Cake (strawberry flavored) Japanese Rice Cake (strawberry flavored)
Number of Servings: 12

Ingredients

    * 1 cup glutinous(sticky) rice flour,
    * 1/4 cup evaporated cane sugar,
    * 2/3 cup water,
    * 1/2 cup cornstarch,
    * 3 tablespoons of strawberry juice,
    * (if you want to fill them) 12 teaspoons strawberry jam.

Directions

Makes 12 pieces of mochi.

Mix well flour, sugar, juice and water. Make it a no-lump, smooth cream. Then cook a microwave oven for 2 minutes while the container is covered. After 2 minutes, take it out, stir well. And then, cook for another 1 minute. Take out, stir well, and cook for another 1 minute. (Total 4 minutes of cooking time = 2+1+1)
After the last turn, take it out, sprinkle cornstarch on a cutting board then put the just cooked mochi dough on it. Flatten the dough, and cut into 12 equal pieces.
Shape each ball in your palm(round it), and dip into the rest of cornstarch and wrap with stretch film.
After you are done with all 12, put them in a bowl and leave them in the fridge for at least 2 hours. Because, if it is not chilled well, it will be even stickier and will not taste as good.

NOTE: If you want to prepare Daifuku (stuffed mochi), use 1 tablespoon of jam(of same fruit) to fill each piece before rounding, dipping and wrapping them.
