Kale & Andouille

Introduction

An overabundance of kale and a craving for spice gave me inspiration for this quick dish that even my picky kids will eat. An overabundance of kale and a craving for spice gave me inspiration for this quick dish that even my picky kids will eat.
Number of Servings: 10

Ingredients

    *Hillshire Farm Polska Kielbasa, 12 oz
    *Andouille sausage, 2 serving
    *Kale, 4 cup, boiled and chopped
    *White Rice, long grain, fully cooked, 4 cup
    *balsamic vinegar, 2 tablespoon (remove)
    *Extra Virgin Olive Oil, 1 tbsp (remove)
    *Garlic, 2 tsp (remove)

Directions

Cut Kielbasa and Andouille sausage into bite size piece and fry until brown. Stir in cooked, chopped Kale and saute until Kale begins to dry out.

While that is cooking Saute garlic in Olive Oil until soft, add cooked rice and saute until rice begins to brown.

Add to rice mixture the Sausage/Kale and mix thoroughly.

Serves 8 -10

I like to add Tabasco and Lime when served for an additional kick.
