Number of Servings: 20

Ingredients

    1- can water chestnuts, drained
    1- pkg Ritz Crackers, crushed
    1- 2 cup pkg shredded cheddar cheese
    1- 8 oz pkg cream cheese
    1- 8 oz pkg sour cream
    1 or 2- pkgs frozen broccoli (I use 2, I like to have more broccoli)
    1/2 stick of butter or margarine, cut in slices

    You can use the light version or low fat of any of these ingredients you wish.

Directions

Pre-heat oven to 300.

Steam the frozen broccoli or cook in skillet, stirring constantly to lighly heat.

Mix sour cream and cream cheese together in seperate bowl, set aside.

Using med or large baking dish, place half the broccoli in bottom of dish. Pack it in tightly, then spread half of the cream cheese/sour cream over the broccoli. Spread evenly. Then place half of the water chestnuts and half of the cheddar cheese.
Finish up with the other half of broccoli, and so on. Top with Ritz crackers and place slices of butter in different places on top of crackers.

Bake at 300 for about 20 minutes. Let stand for a few minutes before digging in. Depending on the type of dish you use, sometimes there will be some extra water in the bottom of the dish from the broccoli.

My aunt leaves the water chestnuts out, but I think they give the casserole that extra texture it needs. This receipe usually feeds 20 or more of us on holidays.

Enjoy, anyone who tries this recipe, will love it I am sure. You just may want to have people try it before telling them what is in it. A lot of people don't like the cream cheese and sour cream mixture.
