Coconut Thai Chicken Soup

Number of Servings: 10

Ingredients

    One head bok choy, chopped coarsely
    One can of white meat chicken
    8 cups water
    1 can light coconut milk
    1 tablespoon chopped garlic
    one handful fresh thai basil, chopped
    2 cups chopped mushrooms, any variety
    2 tsp siracha chili sauce


Directions

This makes about 10 healthy servings, full of veggies!

Just combine all the ingredients and simmer until the veggies are soft and the rice is done.

Use a whole head of Bok Choy, and cut back on the bouillion if you're concered about sodium--this recipe is really high ( I realized after I was done entering it!) This is also great with shredded carrot and curry powder added, and that could probably help cut down on the salt.
