2 tablespoons extra virgin oil
2 tablespoons apple cidar vinegar
1/2 teaspoon Stevia or sugar substitute
1 teaspoons low sodium soy sauce
1 tablespoon basil
1 14-ounce package extra-firm, water-packed tofu, rinsed, patted dry and cut into 1inch cubes
1 bag of fresh spinach cups mixed salad greens
1 cup of grated carrots,
1 large cucumber, chopped
1 large scallion, chopped
1. Mix 1/2 of the olive oil, vinegar, sugar substitute, soy sauce, in a bowl.
2. Drop tofu into a skillet w/ remaining olive oil and brown, tossing in skillet periodically. Should take about 2 to 3 minutes. Remove from the heat and place in covered container and refrigerate.
3. Toss greens, carrots, basil, onion, and cucumber and top with the chilled tofu. Drain and discard any remaining liquid.
