Thai Chicken Soup

Ingredients

    1 tbsp vegetable oil
    1 garlic clove, finel chopped
    2 skinless, boneless chicken breasts, chopped
    1/2 tsp tumeric
    1/4 tsp hot chilli powder
    3 3/4 cups hot chicken broth
    2 tbsp (50ml) lemon juice or lime juice
    2 tbsp crunchy peanut butter
    1 cup thread egg noodles, broken into small pieces
    1 tbsp chopped spring onion
    1 tbsp chopped fresh cilantro
    salt and ground black pepper
    desiccated unsweetened shredded coconut and
    finely chopped jalapeno or red chilli, to garnish

Directions

Heat the desiccated coconut and chilli in a small frying pan for 2 - 3 minutes, stirring frequently until the coconut is lightly browned.
Heat oil in large pan and fry the garlic for 1 minute until lightly golden.
Add the chicken and spices. Stir-fry for 3 - 4 minutes.
Add coconut milk to hot broth. Pour the liquid onto the chicken breasts and add the lemon or lime juice, peanut butter, and thread egg noodles.
Cover the pan and simmer for 15 minutes.
Add the spring onions and fresh coriander. Season well with salt and ground black pepper and cook gently for a further 5 minutes.
Pour the soup into bowls and serve sprinkled with coconut and chilli.
Makes 4 servings.
