Originally this is cooked with a cajun spice, but could be substituted for Italian or Indian... just add the types of spice flavours you fancy. Ingredients

2 good sized pork chops
1 cup raw broccoli
2 medium carrots
1/2 cup uncooked rice
1/2 cup mixed peppers (cut into strips)
Salt and Pepper to taste
Cajun seasoning to taste
Water
Directions
Lay rice evenly in the bottom of a small baking dish. Chop broccoli and carrots into small pieces and lay on top of rice. Sprinkle peppers on top. Pour about an inch of water (enough to cover rice) then layer pork chops on top. Sprinkle dish with salt, pepper and spices to suit. Cover dish with foil and bake for 60 minutes.
