Baked Spicy Pork and Rice (7 Points p/serve)

Introduction

Ingredients

    2 good sized pork chops
    1 cup raw broccoli
    2 medium carrots
    1/2 cup uncooked rice
    1/2 cup mixed peppers (cut into strips)
    Salt and Pepper to taste
    Cajun seasoning to taste
    Water

Directions

Lay rice evenly in the bottom of a small baking dish. Chop broccoli and carrots into small pieces and lay on top of rice. Sprinkle peppers on top. Pour about an inch of water (enough to cover rice) then layer pork chops on top. Sprinkle dish with salt, pepper and spices to suit. Cover dish with foil and bake for 60 minutes.

    I baked this recipe tonight and My wife and I loved it! Didn't have any cajun spice around so i sliced up a fresh pineapple and place a couple of slices on top of the pork! Pretty tasty! - 2/17/09

    This recipe was wonderful! I sauted asparagus, broccoli, mushroom, onion & carrot in 1 Tbsp. olive oil before mixing with water & rice - then laid the pork on top. Yummy!! - 9/25/08

    This was a very tasty dish. The pork chop was moist and the rice and veggies were supreme. I did substitute the salt and replaced it with a salt substitute .
