Black bean cakes with Orange Basil Salsa (6.5 points P/serve)

Ingredients

SALSA
1 medium orange
1 medium tomato
chopped spring onion
basil leaves
2 cloves garlic
1 lime, juiced
1 jalapeno pepper
salt and pepper
BEAN CAKES
1 can black beans, drained and rinsed
1 large egg
1/4 cup bread crumbs
1 tbsn olive oil
1 medium onion
2 garlic cloves
1 celery stalk
cumin
salt and pepper
Directions
Combine all the salsa ingredients in a bowl. Let sit for at least 1 hour.
Place 1/2 black beans in a bowl. Process the remaining beans with egg until smooth. Stir this mixture into the whole beans along with breadcrumbs. Heat the oil in a pan. Add onion, garlic and celery and sautee until very tender and beginning to brown. Sprinkle cumin and cook 1 minute more. Mix vegetables and bean mixture and add salt and pepper. Stir to mix well.
Preheat oven. Lightly oil pan. Divide mixture into 2 portions and then into smaller bakes. Scoop onto pan and flatten out with hand. Bake 10 minutes on each side.
Serve with scoop of 1/2 salsa per portion.
