Submitted by: WOTSHEWROTEIntroduction
Slight adaptation of my other receipe with similar name. Less Chickpeas, more walnuts and a different dressing! Make enough for the whole week at work! Ingredients
-
Chickpeas (150 grams dry = 300 grams canned/soaked)
Couscous I cup dry
Frozen/fresh peas 2 cups
Chopped walnuts 1/3 cup
Red sweet peppers 1 cup chopped
Raisins 1 cup loosely packed
Juice from 2 limes
2 tablespoon balsamic vinegar
1 cup low fat plain yogurt (greek style is best)
Lettuce (any) 5 cups shredded
Chopped fresh parsley and mixed dry herbs to suit your taste
Salt and pepper (optional)
Directions
Prepare chickpeas, couscous and peas so they are cooked/soaked and have cooled. Combine everything except lettuce, lime juice, yogurt and herbs. Once mixed, and to help preserve this dish for the week, mix through the juice from only one lime. In separate dish combine 2nd lime, yogurt and finely chopped herbs. Keep lettuce separate until needed. Divide chickpea dish into 5 portions and refrigerate until needed. For each dish, one portion of chickpea dish, on a bed of lettuce, and topped with yogurt dressing. A little salt or pepper might be nice too.
