Couscous Veggie + Lentil Pilaf (7.5 points p/serve)

Introduction

Very filling. I enjoy this with a dollop of spicy chutney on the side. Very filling. I enjoy this with a dollop of spicy chutney on the side.
Number of Servings: 1

Ingredients

    50 grams raw red lentils
    100 grams raw couscous (around 1/3 cup)
    100 grams frozen chargrilled veggies
    water

Directions

Add lentils and veggies to a pan with 2-3 cups water. Bring to the boil and simmer on low heat (covered) for around 15 minutes until all ingredients cooked and mixture watery. Add couscous immediately and cover for 10 minutes to allow couscous to absorb remaining water. OPTIONAL: When adding couscous you can also mix through some chopped herbs, or seasoning, or a crumbled stock cube for extra flavour.
