Introduction

Number of Servings: 30

Ingredients

    6 eggs, separated
    2 cups whole grain pastry flour
    2 cups organic evaporated cane juice sugar
    1/2 cups milk
    2 tsp baking powder
    1 tsp vanilla extract

    1 can evaporated milk
    1 can sweetened condensed milk
    1 cup heavy cream

    1 1/2 cups whipping cream
    1/4 cup agave nectar
    1 tsp almond extract

Directions

1. Preheat oven to 350. Grease 9 x 13 baking dish
2. Beat egg whites on low speed until soft peaks form. Add sugar gradually with mixer running. Mix to stiff peaks. Add yolks 1 at a time, beating well after the addition of each.
3. Sift flour and baking powder. Add 1/3 to egg mixture alternating with milk, until milk and eggs are mixed in. Add vanilla.
4. Pour into baking dish, bake for 25 - 35 minutes.
5. While it's cooling, mix together evaporated milk, condensed milk and 1 cup whipping cream.
6. Poke holes in cooled cake and pour milk mixture over cake. Use all the milk mixture. You may have to wait while the cake absorbs some. Cover and refrigerate at least 4 hours, but up to overnight.
7. When ready to serve, whipped 1 1/2 cups cream with agave nectar and almond extract.
8. Spread over cake.
9.Arrange any fruit you'd like for decoration.
