Ingredients

    4 cups skim milk
    2/3 cup white sugar
    1/2 cup small pearl tapioca
    2 eggs, beaten well
    1 tsp vanilla extract

Directions

Stir together all ingredients in a slow cooker. Cover and cook on low for 6 hours, stirring occasionally. Serve warm. Makes 8 half cup servings.

(Best made with pearl tapioca, not the minute tapioca found in most markets. My Indian foods market carries the pearl tapioca.)

  • I used rice milk, 2 jumbo eggs, 1 and 1/3 tsp liquid alcohol free stevia and rest of ingredients. Started on high setting, will turn down to low once I notice bubbling. - 4/7/15
