Vegetarian Stroganoff (1 cup per serving)

Ingredients

    1 medium onion, diced
    1 portabello mushroom cap, diced
    2 Tbsp extra virgin olive oil
    2 cans Cream of Mushroom soup
    1 C nonfat milk
    1 - 12 oz pkg Morningstar Farm Prime Grillers (soy crumbles)
    1 - 12 oz pkg No Yolk Broad Egg Noodles
    Salt & pepper to taste
    Sprinkle with Parsley flakes

Directions

Cook egg noodles according to package instructions.

While noodles are cooking, saute onions and mushrooms in olive oil until onions are clear. Season as desired. Stir in all other ingredients and heat through. Mix in noodles and serve.
