Cornish Hen with Turkey Bacon



Introduction

A really easy flavorful dish that's like Sunday dinner in the middle of the week. A really easy flavorful dish that's like Sunday dinner in the middle of the week.

Ingredients

    1 cornish hen
    1 lemon
    1 sprig of rosemary
    2 cloves of garlic
    2 strips of turkey bacon
    1 teaspoon of olive oil
    salt
    pepper

Directions

Wash and pat dry hen. Rub olive oil on skin. Salt and pepper inside and out. Stuff lemon cut in half, rosemary and garlic cloves in cavity. Cut turkey bacon strips in half and lay accross breast.

Place hen on rack on backing pan. Bake at 375 for 60 minutes. Let rest for five minutes before serving.
