Black Bean and Corn Salad

Introduction

A gal brought this to a potblessing meal at the church. It disappeared quickly! If you add more or less mayo or more chips, adjust the calories accordingly. Adding a tbsp. of cumin and some red pepper would give the salad a little kick. A gal brought this to a potblessing meal at the church. It disappeared quickly! Number of Servings: 9

Ingredients

    2 cans yellow corn, drained
    1 can black beans, rinsed and drained
    1/2 medium onion chopped fine
    1/2 green pepper, chopped fine
    1 can water chestnuts, sliced and diced
    1 sm. can sliced black olives
    2/4 cup light mayonnaise (enough to hold the ingredients together)

Directions

Mix all the ingredients together with enough mayonnaise to allow ingredients to hold shape. Place in a 9x9 square cake pan and just before serving, crunch chili cheese Fritos on top. It works best to prepare slightly ahead of use in order for the flavors to develop.

Makes 9 servings.
