Slightly Spicy Split Pea Soup

Introduction

With smoked sausage in place of ham and some red pepper flakes added, this version is close enough to the classic to be acceptable to my yankee sensibilities but has just enough bite to please the Texans in the house. Number of Servings: 6

Ingredients

    Dried green split peas, 2 cups
    Butterball Turkey Smoked Sausage, 7 oz
    Chicken bouillon, 4 cube
    red pepper flakes, 1 tbsp
    Extra Virgin Olive Oil, 1 tbsp
    Water, tap, 8 cups
    Skim Milk, 1 cup
    Black Pepper, 1 tsp
    Minced Garlic, 2 cloves

Directions

In a large soup pot, heat the olive oil on medium and saute the peas, garlic and red pepper flakes for one minute. Add all of the other ingredients except for the milk and bring to a boil. Reduce heat and simmer until the peas soften completely (about 2 hours or so). Stir in the milk and serve.

This also works in the crock pot/slow cooker.
