1 medium squash ( used 2 lb estimate in calculations) 2 T olive oil 1 1 small onion chopped 1 cup celery 2 cups chopped swiss chard 2 T flax seed meal 1/4 cup pecans
Halve and clean squash bake cut side down about 45 minutes with a pan of water or microwave covered till softened. which will cut down cooking time. Saute onions in oil.add chopped celeryand chard, cover and simmer till tender. Spoon into halves. Sprinkle with flax and nuts . Optionally spray with buttery spray or dot with butter ( not in calculations) Bake covered for soft top and uncovered for crisper finishabout 15 minutes. Serves 4 adults or six smaller appetites.
