Asian Chicken

Ingredients

    2 - 4 oz chicken breasts
    1/4 cup chopped onions
    1/4 cup peach preserves
    1 TBSP soy sauce
    2 tsp minced garlic
    1/4 cup chopped green onions

Directions

Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray. Add chicken to pan and cook 6 minutes/side. Remove from pan.

Add onion (not green) to pan and saute until lightly browned. Stir in preserves, soy sauce and garlic. Add chicken back to pan and cook 6 minutes until sauce has thickened and chicken is coated on each side with sauce.

Sprinkle green onions on top.
