Moroccan Stew

Introduction

Number of Servings: 10

Ingredients

    1 butternut squash (peeled, seeded, cubed)
    1 sweet potato (peeled, cubed)
    1 onion, chopped
    3 garlic cloves, minced
    1 can chick peas
    4 tomatoes
    3 sticks of celery
    2 cups veggie stock
    2 cups water
    spices: salt, pepper, bay leaves, chili powder, cumin, cinnamon, curry powder

Directions

Brown onion and garlic in a bit of olive oil. Add celery, tomates and cook until tomates get a bit juicy. Add remaining ingredients and cook until all veggies are soft, about 45 min - 1 hr. I also added a touch of honey and some lemon juice.
