3 cups mixed fruit (strawberries blueberries, melon cubes)
3 tablespoons orange juice
1/5 tablespoons fresh mint
.25 part skim ricotta cheese
1/5 tablespoons confectioners sugar
1/8 tsp vanilla extract
Puree the ricotta cheese, confectioners sugar, and vanilla in a blender or food processor. Spoon over the fruit.

This sounds great! I have one question. The ingredient list says to use 1/5 TBSP of sugar for the whole recipe, but the nutritional breakdown per serving calculates .083 cup per serving. Using this amount, the entire recipe would need 1/4 c. of sugar.Which amount is correct? Can't wait to try this! - 11/2/10
