Ingredients

3 Eggs
1/2 Cup Sugar
1/4 tsp Salt
3 Cups Nonfat Milk, Scalded
1 tsp Vanilla Extract
Nutmeg (optional)
Directions
Beat Eggs in a medium sized bowl. Stir in Sugar and Salt. Whisk the scalded Milk in slowly, add Vanilla.
Pour into Six buttered custard cups or 6 oz ramekins.
Set i n a shallow pan. Pour into the pan hot water about 1" deep to make a water-bath.
Bake at 325 degrees for about one hour or at 350 for 45 minutes.Test by inserting a butter knife near the edge. If it comes out clean, the custard will be firm when it cools.
