Barbecue Chicken Pizza

Ingredients

    For Crust:
    1 1/2 cup wheat flour
    3/4 tsp. yeast
    3/8 tsp sea salt
    1/2 tsp sugar
    1/2 tbsp olive oil
    1/2 c water

    Toppings:
    3 oz. chicken, cooked and cubed
    1/2 c. barbecue sauce
    1/3 c. shredded colby jack cheese
    2 oz. shredded mozzarella cheese

Directions

Preheat oven to 500*, place pizza stone in the center rack of oven an allow to preheat.

Combine 1 cup of flour, yeast, salt and sugar in a large bowl, and stir with a wooden spoon.

Add water and oil and stir until well combined. Dough will be sticky.

Add remaining 1/2 cup of flour and knead well with hands. Dough should have tack but it shouldn't stick to your fingers. If it is too sticky, more flour can be added about 1 tablespoon at a time.

Spray a bowl with nonstick spray and put kneaded dough ball into center. Cover, place in a warm spot, and let rise until doubled in size (can take upwards of an hour in some homes).

Roll out to desired thickness. Top with barbecue sauce, chicken, and cheese. Place onto preheated pizza stone and bake for 10 minutes, or until cheese is golden and bubbly.

Drizzle with additional barbecue sauce if desired.

Makes one 14 inch thin crust pizza or two 6 inch personal pizzas.
