Rice Pudding (firm)

Introduction

This is a baked pudding that I tried, and modified from "The Joy of Cooking" 1975 edition. This is a baked pudding that I tried, and modified from "The Joy of Cooking" 1975 edition.
Number of Servings: 9

Ingredients

    2 cups of cooked rice (I used Brown, but white is often used too)

    1.5 C soy milk
    2 eggs
    1 tbsp soft butter
    .5 C brown sugar (or 6 Tbsp white sugar)
    1 tsp vanilla
    1 tsp lemon juice
    .33 C Raisins

Directions

prepare rice, and set aside.

mix rest of ingredients together, and add to rice.

pour mixture into a 9x9 baking dish,
Bake in ove at 350 for 50 min, or until set.

Brown rice will absorb more liquid than white, so the 'pudding' will turn out very firm. I add a splash of soy milk to make it more 'rice pudding' like.
