Beef and Scallion Stir Fry

Introduction

This is a recipe I found in Everyday Food magazine May 2005 page 54. It is really tasty and should be eaten on top brown rice. Brown rice isn't included in the nutrition info. Ingredients

    2 Tbsp Hoisin Sauce
    2 Tbsp Rice Vinegar
    1 Tbsp Cornstarch
    3/4 tsp Salt
    1/2 tsp Red Pepper Flakes
    1 Tbsp plus 1 tsp vegetable oil
    1-1/4 lbs Flank Steak cut diagonally across the grain into 1/2 in-by-3 in strips
    4 Garlic cloves, minced
    2 bunches Scallions, sliced crosswise 1-1/2 in thick, white and green parts kept separate

Directions

Makes 4 Servings.

1. In a small bowl, whisk together 3/4 cup water, hoisin sauce, vinegar, cornstarch, 3/4 teaspoon salt and 1/2 teaspoon pepper flakes; set aside.

2. Heat 1 tablespoon oil in a 12-inch nonstick skillet over high heat. In two batches, cook steak until lightly browned, turning once, about 2 minutes per batch. Transfer to a plate.

3. Add remaining teaspoon oil to pan along with garlic and whites of scallions. Cook, tossing often, until fragrant, about 1 minute. Whisk hoisin mixture to combine; add to pan along with scallion greens.

4. Return meat to pan; cook, tossing to coat steak with sauce, 1 minute. Remove from heat. Serve immeadiately, over rice and springled with pepper flakes, if desired.

  • This is almost like a stir fry I make with sesame oil and ginger,,with all the other ingredients, it tastes great on steamed brown rice,, I even add garlic to the rice!! - 9/5/10

    Sesame oil and ginger sound good, I'll have to give it a try next time but I'll watch the sesame oil closely since it seems to burn easily. This is my first time buying and using hoisin sauce and it is yummy!
