3 large eggs
3 egg whites
1 1/2 cups Ore-Ida frozen hash brown potatoes
1 tbsp chopped Onion
1 cup broccoli, cooked, chopped
1 medium carrot, peeled and grated
1/4 tsp kosher salt
2 tbsp Sour Cream
1/4 cup 1% Milk
Beat eggs, sour cream and milk in a bowl. Add veggies and salt; stir to combine. Pour into a quiche pan that has been greased or lightly sprayed with cooking spray and bake for approximately 30 minutes at 375 degrees. Cool for 2-3 minutes. Slice into quarters and serve.
