Vegetable Soup with Meatballs

Introduction

A soup chock full of vegetables with hearty meatballs. Omit the meatballs and use vegetable bouillon for a vegetarian dish. Ingredients

    1 can (about 1.5 cups) diced tomatos
    1 can (about 1.5 cups) sweet corn
    1 can (about 1.5 cups) chickpeas
    1.5 cups frozen cut leaf spinach
    1.5 cups frozen peas
    1.5 cups frozen broccoli
    3 medium carrots, chopped
    1 medium sweet onion, chopped
    3 cloves garlic, minced
    12 cups water
    2 tbls Better Than Bullion Chicken Base
    1 pound ground turkey
    1 egg
    1/2 cup masa harina
    1/2 tsp ground pepper
    1 cup quinoa

Directions

In a 6qt stockpot, combine vegetables, water and bullion and bring to a boil. While the soup is heating, combine turkey, egg masa and pepper. Once the soup has reached a boil, form the turkey mixture into one inch meatballs and drop into the soup. Add the quinoa. Cook for 15 minutes. Season to taste with the herbs and spices of your choice. Makes 12 servings of about 2 1/4 cups.
